My sister had a lifelong friend Mary Jane. Mary Jane's Grandma Parsons used to make these cookies.
Of course I couldn't leave well enough alone so I concocted a frosting for them.
Ingredients:
1/2 cup shortning
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup crushed pineapple
1 egg
2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1 cup nuts, chopped
Frosting
1 10 ounce container cream cheese frosting
rest of crushed pineapple
3 tablespoons bits of brickle toffee bits for garnish
Beat til fluffy the shortning and sugars.
Beat the egg, add it to the pineapple, and add to sugar mixture.
Sift together the flour, soda, salt, and powder.
Add slowly to the sugar mixture.
Add the vanilla and nuts.
Bake in a 400 degree oven for 8 to 9 minutes.
Mix the frosting and pineappple together.
Frost the cookies by rounded teaspoons when they are still warm.
Sprinkle the brickle bits over each cookie
