Cookie recipes to honor my mom & sisters:
1 stick unsalted butter, softened
1-1/4 c. confectioners sugar
2-1/2 c. flour
1 tsp vanilla extract
juice of 1 lemon
1 egg white mixed with 1 tsp water
3 tbsp walnuts, ground
Compote:
2 tart apples
1-1/4 c. sugar
1-1/2 c. water
dash cinnamon
dash powdered clove

Preheat oven to 350 degrees. Makes about 2 dz.
Blend flour, baking powder and baking soda in small bowl. Set Cream butter with confectioners sugar. Add flour, vanilla, and lemon juice, blending well. Place dough onto floured surface, knead till well incorporated; allow dough to rest for about 5 minutes. Roll dough out to about 1/2" thickness, cut out circles with cookie cutter, place on ungreased baking sheet. Brush tops with egg wash, then sprinkle on walnuts. With thumb, make a deep dimple in the center of each cookie. Bake 13-15 minutes till light brown. Allow to cool.

Compote: In saucepan, add water, sugar, cinnamon and clove - bring to a boil. Add in apples. Cover, simmer till soft. Chill mixture in fridge. Once cooled, add a tbsp of compote to the dimple of each cookie. Allow to set a couple minutes.
