* 1 cup(s) of Butter or Margarine
* 3/4 cup(s) of White sugar
* 3/4 cup(s) of Brown Sugar
* 2 Eggs
* 1 tsp. of Vanilla
* 1 cup(s) of White Flour (I use 1/2 cup wheat, 1/2 cup white)
* 1 tsp. of Sea Salt
* 1 tsp. of Baking Soda
* 1 tbsp. of Cinnamon
* 1/2 cup(s) of dried, unsweetened coconut
* 2 1/4 cup(s) of Quick Cooking Oatmeal
* 1 cup(s) of Raisins (for a softer texture, soak for 10 minutes in water and drain)
Steps
1. Pre-heat oven to 375. In large bowl cream together room temperature butter or margarine and sugars until fluffy. Add eggs one at a time. Add vanilla and stir.
2. In medium bowl, combine flours, salt, baking soda, cinnamon and coconut. Gradually add to liquid ingredients and mix to combine.
3. Stir in oatmeal and raisins until well combined. Place by spoonful on cookie sheets. Slightly flatten with your fingers. The cookies won't spread out much while baking so you can place them close together.
