3-3/4 cups whole oats (not 1-minute oatmeal)
1/2 cup shortening
1/4 cup butter
2 eggs
1.5 t vanilla (real is best)
1/2 cup flour
1 t soda
1 t baking powder
1 t salt
1 c brown sugar (firmly packed)
1/3 c granulated sugar
Toast oatmeal on a cookie sheet in a 325 preheated oven for about 10 minutes until it is golden brown. Remove and cool.
In a food processor add 1-1/4 cup of the toasted oats and process until it looks like flour, then measure 1 cup oat flour into bowl and add the baking soda, baking powder, salt, 1/2 cup flour and 2.5 cups toasted oats, mix and add your favorite's, I added 1/2 c 83% cocoa chocolate chips, 1/2 c chopped walnuts.
1/2 raisins and 1/3 c butterscotch chips, mix well.
In mixer blend shortening and butter beat until creamy and fluffy add sugars, then eggs and vanilla blend well, mix in dry ingredients and goodies, blend well.
Drop by tablespoon and roll in hand into a ball if you like, then dip glass bottom in sugar in the raw and press on top of cookie, so all have the same round shape.
Bake at 325 about 10 minutes until golden brown.
Get a glass of milk or cup of tea or coffee and enjoy!!
